Calypso™ Mango & Prawn Kebabs with Sweet Chilli Avocado Dip

Ingredients:
Kebabs:
1/2 kg of uncooked medium green prawns, peeled and de-veined
3 medium Calypso™ mangoes cut into 2cm cubes
Marinade:
2 tablespoons fish sauce
1 tablespoon soy sauce
2 tablespoons lime juice
1 tablespoon grated palm sugar or soft brown sugar
Dip:
2 ripe avocados, mashed
2 tablespoons sweet chili sauce
1 tablespoon lime juice
1 red chili – deseeded and finely chopped

Ingredients:
2 large Calypso™ Mangoes – sliced into long strips
2 avocados sliced into long strips
1 bag of fresh baby rocket leaves
2 teaspoons toasted pine nuts
160g goats cheese or feta cheese
Dressing:
Juice of ½ a lime
2 teaspoons olive oil
Pinch freshly ground black pepper
Lightly toasted Turkish bread to serve

BBQ Chilli Calypso™ Cheeks

Ingredients
2 large Calypso™ Mangoes
3 tablespoons orange juice
3 tablespoons honey
1 teaspoon red chilli, diced finely
Dollop cream
Lime zest and lime wedges
Directions:

Mix the honey, orange juice and chilli until well combined and then pour into a wide shallow glass dish.
